INGREDIENTS
2 large Avocado
1 cup Cherry Tomatoes, quartered
1/2 cup Red Onion, minced
2 cloves Garlic, minced
Juice of 1 Lime
1/2 tsp. Cumin, optional
A handful of chopped Cilantro, optional
Salt and Black Pepper to taste

METHOD
Cut the Avocados lengthwise into halves and remove the pits. Using a spoon, scrape the flesh of the Avocados into a bowl, and with a fork or potato masher, slightly mash the avocados, making sure to keep it a little chunky.
Add garlic, salt, pepper, and lime juice. Taste and then adjust seasonings according to your liking.
Fold in the red onion and cherry tomatoes.
Serve immediately, along with tortilla chips or some fresh veggies for dipping.
NOTES
Remove the seeds and liquid from your tomatoes before chopping and mixing them into your guacamole. This will keep it thick and chunky!
