Burnt Sugar Syrup

This syrup can be part of a cake, such as in burnt sugar cake, and some people even add it to their traditional Christmas puddings and cakes to make them darker!

Burnt Sugar Syrup

INGREDIENTS

1 cup Granulated Sugar
1 cup Hot Water

METHOD

Dump the sugar in a medium skillet over medium-low heat. Stirring constantly, cook until the sugar melts, about 5 minutes. The sugar will seize during this process, just keep stirring.

Once the sugar has melted, continue to cook until it becomes dark brown, foams and smokes, about 1 minute.

Immediately and carefully remove from heat.

Stirring constantly, pour in the hot water. The sugar will splatter, so be careful.

Once the water is fully incorporated, return to medium-high heat and cook, about 2 minutes.

Allow cooling completely before use.

The syrup can be stored in an airtight container in your fridge.

TIPS

Burnt sugar is the caramelization of sugar to produce a very deep, rich, brown-colored syrup. It is used to flavor and color many dishes.
You don’t actually “burn” the sugar–you melt it.
If burning the sugar more than the right stage, the sugar will turn black and bitter.
Stir only occasionally. The less you stir, the better.
Add the hot water, off – of the heat.
Sugar will bubble up when you add the water.
Continue with medium-low heat for 2 more minutes.
